I don't know about manuals *as such*, but we certainly do include
books about how to use various software in our collection, both for
open-source software and popular proprietary titles, wherever we
perceive a patron demand.  

Speaking of that, I think our Gimp book here is pretty dated at this
point.  ISTR that it covers version 1.x, and the UI is, from a user's
perspective, pretty different these days.  Does anyone know if there's
a good, reasonably up-to-date book on the Gimp?
